Pork and Celery Dumplings


I made some pork and celery dumplings over the weekend and decided to have them for dinner and also made some bok choy as a vegetable side. I've included the recipes below along with some pictures. Enjoy.


Ingredients:
8 ounces of ground pork
1 tablespoon water
1/2 teaspoon of salt
1 egg white
1 tablespoon corn starch
1 teaspoon of sesame oil
1 teaspoon of soy sauce
3 stalks of celery, blanched and diced
1 package shumai wrappers, round edges with scissor

Mix the first seven ingredients in a mixing bowl, be sure to mix it well (about 10 minutes). I like to mix with my hands first then use a pair of chopsticks. Once the mixture is well incorporated, add the celery and mix. Take about 1 tablespoon of the filling and place it in the middle of the wrapper and fold. Make one dumpling and boil until the filling is cooked through. Taste the dumpling and make any necessary adjustments before making the rest of the dumplings. This recipe makes about 25 dumplings depending on the size of the filling.
