Green Lentil Curry with Collard Greens | Plant Based, Oil Free, Instant Pot



I was at the market last week and decided to pick up a bag of green lentils. Unlike red lentils, the green lentils retain their shape after cooking and have a slightly nutty taste. My favorite way to prepare them is this green lentil curry with collard green. It's easy to make and delicious to eat.

Green Lentil Curry with Collard Greens


Ingredients:
1/2 cup dry green lentils, soaked for 24 hours and rinsed
1 cup filtered water
1/2 cup carrot, diced
1/2 cup celery, diced
1/2 cup onion, diced
1/2 tbsp ginger, minced
1 tbsp curry powder
1/4 tsp turmeric powder
1/4 tsp cayenne pepper
1 bunch collard greens, chopped
2 garlic cloves, minced
Salt and pepper to taste

Serves 2

Add the first 10 ingredients to the Instant Pot and give it a good stir. Set to manual for 20 minutes on high pressure. Release pressure, divide the green lentil curry into two bowls, mix in the minced garlic and enjoy! Add salt and freshly ground pepper to individual taste.
